Knolla's Pizza: Freedom From Corporate Pizza
Knolla’s Pizza has been serving up delicious pizza for over 35 years, and has even been voted "Wichita's Best Pizza" five years running. Founded in 1981 by brothers Pat and Tim Knolla, the two brothers left their careers with another larger pizza company and traveled to New York City. Here they partnered with two Sicilian brothers whose pizza parlor was known to be the best in the city. While working with the brothers they learned the secrets behind Knolla’s famous French bread crust and that the secret to a great pizza is using fresh ingredients. The Sicilian brothers also shared the importance of a personal touch and taught the Knollas that it "can't be pizza" if the dough is not made fresh daily and worked by hand.
With their new found knowledge the Knolla Brothers opened their first store in Orlando, Florida in 1981. Pat Knolla later chose to open a Wichita location in 1988. After a few bumps and location changes the Knolla’s settled into their location at 13th and West Street in 1995 and have been in operation since.
Knolla’s Pizza is your “freedom from corporate pizza. The secret behind Knolla’s pizza is their fresh ingredients. It all starts with their hand kneaded dough that is made fresh daily, then they ladle on their savory mouth-watering sauce that’s not too spicy and even a little sweet. Then they pour on a heaping mound of whole milk mozzarella cheese. They finish off your pie with a generous amount of the fresh toppings of your choice.
Today Knolla's Pizza continues to offer New York style, as well as Chicago Pan style crusts, alongside many other delicious menu items such as their salads, breadsticks, and dessert pizzas. If you're craving something other than pizza they also serve up items such as sandwiches, buffalo chicken wings and cheese sticks.
The Knolla family continues to operate the four independently owned and operated Knolla's Pizza locations with the help of family, a great staff and the loyalty of our customers, most of whom they know by name.
